Grilled Fish

Fish marinating:

1) 500 gm stingray, and cut slit at the thicker end
2) ½ tbsp turmeric powder
3) 3½ tbsp assam paste juice or 5-6 kalamansi or lime, juice extracted
4) 2 tbsp Lee Shun Hing Oyster Sauce
5) 2 tbsp Lee Shun Hing Sesame Oil
6) Salt to taste

 

Ingredients :

1) Banana leaves
2) Aluminium foil
3) 3 tbsp Cooking oil

 

Sambal or spice mix – blend together item 1 – 7:

1) 5 tbsp grinded cili / cili boh
2) 2 stalks lemon grass
3) 4-5 cloves garlic
4) 3 shallots
5) 3 cm long of ginger
6) 1 medium size tomato
7) 2 tbsp of soaked dried shrimps
8) 5 gm Belacan
9) 1 pcs daun limau purut
10) 50 ml assam paste juice
11) 1 tbsp of castor sugar or brown sugar

 

Garnish:

1) 1 big onion, cut in wedges
2) 20g tomato, sliced thinly
3) 3 pcs Ladies Finger, cut in slanting position
4) 3 pcs Four Angle Bean, cut in slanting position
5) 1-2 Red chillies, sliced thinly
6) 3 pcs daun limau purut
7) 12 cucumbers, sliced thinly
8) 2 lime (limau Kasturi)
